Terroir:Gravel hillsides on clay-limestone and marl soils
Viticulture: Cup size & cordon de Royat (Syrah), plowing 1 row out of 2, inter-vine work
Harvest:Manual, sorting in the vineyard and cellar before destemming
Winemaking:Stainless steel and cement tanks, fermentation with native yeasts, 28-30 days of gentle maceration
Breeding:In barrel for 12 months with stirring of fine lees then vat
Production:16,000 bottles, bottled unfined and unfiltered
Tasting:Nose of black fruits and zan. Fleshy, intense palate with a long, finely minty finish
Agreements : Red meat, grilled, roasted or simmered, old cantal
Guard :Drink within 10 years
Service:Decant and serve at 15ºC
