GUYANA JAMAICA
TASTING NOTES
VISUAL: almost Mahogany
NOSE: on the nose, the sweet sourness of Jamaican rums marks its territory. Here we are in a world of English-style rum, full-bodied and fragrant, where very ripe exotic fruits reign supreme. A few oxidized and roasted nuts provide the backdrop, and the walnut provides beautiful relief and density. Aeration removes this very fruity and tropical air, slightly soaked in solvent, to reveal much deeper and melted notes of prunes and nuts. It is indeed Guyana which is speaking now, and which reminds us of the heyday of British navy rums.
MOUTH: the palate is powerful, punchy, but also offers a certain richness which immediately reassures. We oscillate between the acidity of large Jamaican rums swollen with dunder, and the rough and powdery texture of old Demerara. In any case, we are dealing with a beautiful concentration of fruit, enclosed in a well-toasted barrel, whose wood exudes maple syrup, cooked sugar and soy sauce. In the end, the very liquorice molasses rolls over the nut, until it is completely coated.
