Viticulture: Training cup pruning, plowing 2 rows out of 3, inter-vine work
Harvest:Manual, sorting in the vineyard and cellar before destemming
Winemaking:Conical wooden vat and terracotta amphorae, fermentation with native yeasts, maceration without handling for 35 days in vats, 10 months in jars (dolia)
Breeding:On fine lees with weekly rotating stirring of the barrels for 12 months
Production:8,100 bottles, bottled unfined and unfiltered
Tasting:Gourmet nose of red fruits and slightly spicy notes. Smooth, straight and fresh mouth reminiscent of the nose. Beautifully powdery tannins. Nice length

Guard :To drink within 10 years, evolving towards notes of sweet spices, leather and blond tobacco
