Terroir:Fine gravel on clay-limestone soils
Viticulture: Goblet size. Plowing 2 rows out of 3. Inter-vine work
Harvest:Manual, sorting in the vineyard and cellar before destemming
Winemaking:Stainless steel tank and terracotta amphorae (60% of volume), gentle maceration for 30 days in tank and 12 months in jars (dolia), fermentation with native yeasts
Breeding:12 months in barrel (with lees stirring) and terracotta eggs
Production:7,000 bottles, bottled unfined and unfiltered
Tasting:Elegant nose and mouth, with ripe fruits and sweet spices. Complex palate combining depth, finesse, silky tannins, magnificent persistence
Agreements : Refined cuisine! Very nice pairings around duck, veal and also cheeses, St Nectaire or a sheep's cheese
Guard :To drink within 10 years, evolving towards notes of sweet spices, leather and blond tobacco
