WINEMAKING AND BREEDING
▪ Manual harvest, 100% destemmed
▪ Fermentation in concrete vats, thermoregulated at 25°C on naturally present native yeasts. Once or twice a day, pumping over or delestage ensures good extraction of tannins and color. Vatting lasts up to 3 weeks with stirring of the lees
▪ Malolactic fermentation followed by aging in stainless steel vats for 6 months
TASTING
▪ Intense purple red color
▪ Complex and fine nose of red fruit giving way to aromas of garrigue and liquorice
▪ Palate frank attack, rich and delicious with notes of red fruits, flavors of thyme. Silky tannins providing very nice length on the palate
